Ancestral Gems brings time-shaped ingredients forward as foods made for modern pleasure.

Hugo Quinn grew up in northwest China, where jujubes were never exotic. They were an ordinary part of life—familiar fruit found in family kitchens, local markets, and the rhythms of the region.

Years later, after an afternoon of Western baking, Hugo noticed the cinnamon left on the counter and wondered what might happen if its warmth met the fruit he had known since childhood.

The first pairing began as a question. Then came repeated trials: different jujube varieties, different cinnamons, different ways of finding balance. From that process, Cinna-Jubes took shape.

Jujubes have been cultivated in China for more than 4,000 years. Some varieties are enjoyed fresh; others are dried, developing a soft bite and mellow sweetness distinct from the dates more familiar in the United States. Cinnamon, meanwhile, has long been at home in American baking.

During a three-month stay in the United States, Hugo noticed that his weight had climbed by about 17 pounds. After returning to China and returning to the familiar rhythm of simpler, recognizable foods, his weight soon came back down. That experience was personal, not a medical experiment. It sharpened a conviction: people deserve more everyday opportunities to eat food that still feels connected to its ingredients.

That conviction became part of Ancestral Gems—not a rejection of modern life, and not a promise of a miracle, but a return to foods with a clear beginning: fruit, spice, time, and the pleasure of eating them together.

OUR PHILOSOPHY

Not all gems are mined.

Some are grown, gathered, dried, ground, and carried through generations. We look for ingredients with a life before us—foods shaped by place, memory, and time—then compose them for the way people eat now.

We believe better food can feel both rooted and new: made from recognizable ingredients, built around pleasure, and light on unnecessary additions.
